Tomato Soup

You can buy organic tomatoes but the best are ones that you grow yourself. Don't bother planting them outside because you can grow the best tomatoes with an indoor tomato tree that makes huge tomatoes!

Other Ingredients:
3/4 cup Olive Oil
Salt and Pepper
1 stalk celery
1 Carrot
1 cup Chicken Broth
1 Bay Leaf
2 tblspoons Butter
1/4 cup fresh Basil leaves (chopped)
1/2 cup Heavy Cream (optional)
Directions
Preheat the oven to 450 degrees
Dice the tomatoes or use a 14oz can of chopped tomatoes. Drain the juices and spread them on to a cookie sheet season them with salt and pepper and pour the olive oil over them and pu them in the oven for about 15 minutes or so until they are carmelized and then take them out.
Get out your favorite saucepan and heat the remainder of the olive oil, celery, carrots, onions and garlic until they have softened up. Then add the roasted tomatoes and then stir until vegetables start to dissolve and add the spices, butter, broth and simmer for about 15-20 minutes. If you have a hand puree handy then you can blend it all until its really smooth.
